The majlis began as the open side of a Bedouin tent — a space where any traveler could expect water, dates and a poured cup. As the Emirates urbanized, the majlis became a room, then an institution, then an UNESCO-listed practice. What never changed is the grammar of welcome: the host pours, the guest is served first, and the cup is never empty for long.
A room built around a cup
The word majlis comes from the Arabic root for 'to sit' — and for centuries it has meant the sitting room where a household opens itself to the world. Before the agenda, before the news, before any business: the pour. Tea and coffee are not served at the majlis; the majlis is built around them.
Etiquette carried the meaning. The eldest pours, the guest's cup is filled only a third — so it stays hot and must be refilled, extending the welcome — and refusing a cup outright was once a statement no host forgot.
From dallah to glass
Coffee came first, roasted and ground and cardamomed in the dallah. Tea arrived with trade routes through the Gulf in the nineteenth century and never left — sweet, strong, poured from height into small glasses so it breathed on the way down.
The two still share the table today: coffee to open, tea to linger. The dallah speaks first; the teapot stays for the whole conversation.
A cup offered is a sentence of welcome. The majlis ends where it began: with company.
The majlis today
Modern majlis rooms have swapped floor cushions for low sofas and charcoal for electric burners, but the grammar is unchanged: something hot is poured before anything important is said. In Emirati homes, and in ours in Al Ain, the kettle is still the first host.
If you are building your own ritual, start with the glasses: small, clear, made to be refilled. The tea can be rare or humble — the refill is the luxury.
